How to Make Baked Garlic-Parmesan Green Beans

  1. Prep the oven and water

Heat the oven to 425°F and set a large pot of water over high heat.

Add the blanching salt to the water, and line a sheet pan for easier cleanup.

  2. Blanch the green beans

Boil the trimmed green beans for 3 minutes, which keeps them tender with enough bite for baking.

Drain and rinse under cold water right away so the beans do not keep softening from the lingering heat.

  3. Dry and season

Pat the beans very dry with towels, because leftover water makes them steam instead of roast.

Toss them with olive oil, minced garlic, garlic powder, kosher salt, black pepper, and 1/2 cup Parmesan.

Use finely minced garlic here, since it coats better and is less likely to burn.

  4. Roast at high heat

Spread the beans in an even layer on the sheet pan, leaving space for the edges to brown.

Roast at 425°F for 10 to 12 minutes, until the outside lightly roasts without turning the beans too soft.

  5. Finish with Parmesan

Transfer the hot beans to a serving dish and sprinkle on the remaining 2 tablespoons Parmesan.

Splitting the cheese gives you a deeper baked layer and a fresher, more noticeable cheesy finish.

Substitutions

Parmesan cheese for Pecorino Romano
Pecorino brings a sharper, saltier bite and melts well. The beans taste a little bolder, especially beside roast chicken or steak.
Olive oil for avocado oil
Avocado oil handles high heat very well and keeps the texture just as glossy. Its mild flavor lets the garlic and cheese stand out.
Finishing Parmesan for crispy panko
Toasted panko adds crunch and a fun contrast to the tender beans. Mix it with a little lemon zest for a bright finish.

Tips

Use a wide sheet pan
Crowding traps moisture and slows browning. A wide pan keeps the beans in one layer, so more surfaces blister.
Grate your own Parmesan
Freshly grated Parmesan melts more evenly than pre-shredded cheese. It also gives you better coverage and a cleaner flavor.
Warm the serving dish
A warm dish keeps the cheese soft a little longer. This helps the beans stay glossy at the table.
Taste before the final cheese
Parmesan varies in saltiness, so check the beans before the last sprinkle. Add a small pinch of salt only if needed.

FAQ

Why did my green beans turn out soft instead of roasted?
They were likely wet after blanching or too crowded on the pan. Dry them well and spread them in one layer.
Can I skip blanching?
You can, but the texture will be less even. Blanching gives the beans a tender center before the quick roast.
How do I keep the garlic from burning?
Mince it very finely and coat it with the oil before roasting. Large pieces dry out faster and darken too much.
Can I make these ahead for a holiday meal?
Blanch and dry the beans early, then refrigerate them. Toss and roast just before serving for the best edges.

Serving Suggestions

These green beans pair especially well with roast chicken, baked salmon, or a holiday ham.

A squeeze of lemon adds brightness, while toasted pine nuts bring buttery crunch.
