How to Make Spanish Manchego Mac and Cheese

  1. Boil the pasta

Bring a large pot of water to a boil, then add the tablespoon of salt.

Cook the cavatappi until just shy of al dente, following the package time.

Reserve 1/2 cup pasta water, then drain the pasta and set it aside.

  2. Make the crispy topping

Melt 1 tablespoon butter in a skillet over medium heat.

Add the panko and stir for 2 to 3 minutes, until golden and crisp.

Transfer the crumbs to a plate so they stay crunchy.

  3. Start the cheese sauce

Melt the remaining 2 tablespoons butter in a large saucepan over medium heat.

Whisk in the flour and cook for 1 minute, until the mixture looks smooth and lightly foamy.

Add the garlic and smoked paprika, then stir for 30 seconds until fragrant.

  4. Add the milk and seasonings

Slowly whisk in the warmed whole milk and warmed evaporated milk.

Keep whisking until the sauce is smooth, with no flour lumps.

Add the salt and black pepper, then simmer gently for 3 to 5 minutes.

The sauce should coat the back of a spoon.

  5. Melt in the cheese

Lower the heat to very low before adding the shredded Manchego and Fontina.

Stir a handful at a time until the cheese fully melts and the sauce looks glossy.

If the sauce feels too thick, add a splash of reserved pasta water.

  6. Combine and serve

Add the drained pasta to the sauce and stir until every piece is well coated.

Let it sit for 1 minute so the pasta absorbs some sauce.

Spoon into bowls or a serving dish, then scatter the toasted panko over the top.

Serve right away while the sauce is creamy and loose.

Substitutions

Fontina for Monterey Jack
Monterey Jack melts smoothly and keeps the sauce creamy. The flavor is milder, so the Manchego still stays front and center.
Panko for crushed kettle chips
Crushed plain kettle chips make a fun, extra-crispy topping. They add more salt and a richer crunch with almost no work.
Whole milk for half-and-half
Half-and-half makes the sauce even silkier and more luxurious. It also helps the cheese taste fuller and rounder.

Tips

Warm the dairy first
Warm milk blends into the roux faster and more smoothly. It also lowers the chance of a grainy sauce.
Shred cheese from a block
Pre-shredded cheese often contains anti-caking starches. Freshly shredded cheese melts cleaner and gives a smoother finish.
Keep the heat low after cheese
High heat can make cheese sauce break or turn stringy. Gentle heat keeps the texture creamy and stable.
Undercook the pasta slightly
The pasta keeps softening after it meets the hot sauce. Slightly firm pasta holds its shape and texture better.
Toast the crumbs separately
Toasting panko in a skillet gives better color control. It also keeps the topping crisp longer at the table.

FAQ

Why did my cheese sauce turn grainy?
The heat was likely too high when the cheese went in. Lower the heat, add cheese slowly, and stir just until melted.
How do I loosen a sauce that feels too thick?
Stir in reserved pasta water, a tablespoon at a time. Warm milk also works and keeps the sauce rich.
Can I make this ahead of time?
Yes, but it is creamiest right after cooking. Reheat gently with a splash of milk and add the topping later.
What if I do not have cavatappi?
Use elbow macaroni, shells, or corkscrew pasta. Shapes with ridges or curves hold the sauce especially well.

Serving Suggestions

This mac and cheese tastes great with roast chicken, grilled steak, or a simple green salad.

A spoonful of caramelized onions adds sweetness that pairs nicely with the smoky paprika and nutty Manchego.

For a party dish, serve it in a warm baking dish with extra toasted crumbs on the side.
