How to Make Cottage Cheese Chicken Alfredo

  1. Cook the pasta

Bring a large pot of water to a boil, then add the salt.

Cook the penne until al dente, then reserve 1/2 cup pasta water before draining.

During testing, the sauce thickened after the pasta was added, so reserved water made texture changes easy.

  2. Brown the chicken

Pat the chicken dry and cut it into about 1-inch pieces.

During testing, this size browned well without drying out before the centers cooked through.

Season with garlic powder, salt, and pepper.

Heat olive oil in a large skillet over medium-high heat, then cook the chicken until browned.

The chicken should reach 165°F and take about 6 to 8 minutes.

Transfer the chicken to a plate.

  3. Blend the Alfredo sauce

Add cottage cheese, milk, Parmesan, Italian seasoning, bouillon powder, and black pepper to a blender.

During testing, blending for at least 60 seconds made the sauce much smoother.

During testing, adding the Parmesan to the blender helped it spread more evenly.

  4. Warm the sauce gently

Melt the butter in the same skillet over medium-low heat.

Add the minced garlic and cook for 30 seconds, just until fragrant.

Pour in the blended sauce and warm it gently, stirring often.

During testing, gentle warming kept the sauce creamier than letting it boil.

  5. Combine and loosen

Add the drained penne and cooked chicken to the skillet, then toss until coated.

If the sauce looks thick, add the reserved pasta water a little at a time.

During testing, the full 1/2 cup made final consistency easier to control.

  6. Finish and serve

Taste and adjust the salt or pepper, then serve hot.

Top with extra Parmesan, if you like a sharper finish.

Substitutions

Penne for rotini or fettuccine
Rotini holds the sauce in its twists. Fettuccine gives a more classic Alfredo feel.
Chicken breasts for boneless skinless thighs
Thighs stay juicier and taste a little richer. They may need an extra minute or two.
Some Parmesan for aged Asiago
Asiago brings a nuttier, sharper bite. The sauce still melts smoothly and tastes more savory.

Tips

Use freshly grated Parmesan
Pre-grated cheese melts less smoothly because of anti-caking powders. Freshly grated Parmesan gives the sauce a cleaner finish.
Give the blender time
A full minute matters here. If your blender is weaker, blend 90 seconds for the smoothest sauce.
Avoid crowding the skillet
Crowding traps steam and limits browning. Use a wide skillet or cook the chicken in two batches.
Finish off the heat
Turn off the burner before the last splash of pasta water. Carryover heat keeps the sauce smooth and glossy.
Warm the bowls
Hot bowls keep creamy pasta loose for longer. This helps the sauce stay silky at the table.

FAQ

Why is my sauce grainy?
The sauce was likely under-blended or overheated. Blend at least 60 seconds and warm it over low heat.
Why did the sauce get so thick?
Pasta keeps absorbing liquid after mixing. Stir in reserved pasta water, 1 tablespoon at a time, until it loosens.
How do I keep the chicken juicy?
Cut the pieces about 1-inch wide for even cooking. Pull them once they reach 165°F.
Can I reheat leftovers?
Yes, but use gentle heat and add a splash of milk. Strong heat can tighten the sauce.

Serving Suggestions

Extra Parmesan and chopped parsley add a sharper finish and fresh color.

Garlic bread and a crisp green salad make this a balanced, family-friendly dinner.

Steamed broccoli or spinach stirs in easily if you want more vegetables.
