How to Make Creamy Spinach Pasta for Kids

  1. Boil the pasta

Bring a large pot of salted water to a boil, then cook the fusilli until just tender.

Reserve 1/2 cup pasta water, then drain the pasta.

  2. Cook the garlic and spinach

Heat the olive oil and butter in a large skillet over medium heat until the butter melts.

Stir in the garlic and cook for 30 seconds, just until fragrant.

Add the spinach and cook until wilted, stirring often so it softens evenly.

  3. Blend the green base

Let the spinach cool for a minute before blending, especially in a standard blender.

Transfer the spinach mixture to a blender and pulse until chunky, not fully smooth.

Add the cream, milk, cream cheese, Italian seasoning, salt, and pepper to the blender.

Blend again until combined, while keeping a little texture from the spinach.

  4. Finish the sauce

Pour the spinach mixture back into the skillet and warm it over low heat.

Whisk in the Parmesan a little at a time until the sauce looks smooth.

  5. Toss and serve

Add the cooked pasta and toss until every piece is coated in sauce.

If the sauce seems thick, stir in two to four tablespoons reserved pasta water.

    Serve warm.

Substitutions

Fusilli for wagon-wheel pasta
Wagon-wheel pasta feels playful for kids and still grabs the thick sauce well in every bite.
Heavy cream for half-and-half
Half-and-half makes a lighter sauce. Add two extra tablespoons Parmesan to keep the texture creamy.
Fresh baby spinach for frozen chopped spinach
Thawed frozen spinach saves prep time and blends easily. Squeeze it very dry so the sauce stays rich.

Tips

Salt the pasta water well
Well-salted pasta water seasons the noodles from within. That keeps the mild sauce from tasting flat.
Soften the cream cheese first
Softened cream cheese melts faster and prevents small lumps. Let it sit out for 20 minutes before cooking.
Keep the heat low for Parmesan
High heat can make Parmesan clump or turn oily. Keep the pan low and add cheese gradually.
Leave the spinach a little chunky
A chunky blend keeps the sauce green but familiar-looking. It also hides the spinach without making the sauce completely smooth.
Use pasta water slowly
Starchy pasta water loosens the sauce without thinning its flavor. Add it one spoonful at a time.

FAQ

Why is my sauce too thick after mixing in the pasta?
Pasta keeps absorbing liquid as it sits. Stir in reserved pasta water one tablespoon at a time until glossy.
Why does the sauce look grainy?
The pan was likely too hot when the Parmesan went in. Lower the heat and add cheese slowly.
Can I make this ahead for lunchboxes?
Yes, but keep it slightly loose when cooking. Reheat with a splash of milk so the sauce turns creamy again.
What if my child notices the spinach?
Blend the sauce a little smoother next time. You can also use smaller pasta shapes and extra Parmesan.

Serving Suggestions

A small squeeze of lemon brightens the rich sauce without making it sharp.

Toasted breadcrumbs on top add crunch, which many kids enjoy against the soft pasta.

Serve it with chicken meatballs, roasted broccoli, or buttered peas for an easy family dinner.
