How to Make Keto Chicken Chili

  1. Cook the bacon

Place the chopped bacon in a Dutch oven over medium heat and cook until crisp.

Transfer the bacon to a plate and leave about 1 tablespoon of fat in the pot.

  2. Sauté the vegetables and spices

Add the onion and poblano, then cook until softened, about 4 minutes.

Stir in the garlic, cumin, smoked paprika, onion powder, oregano, salt, and pepper for 30 seconds.

  3. Simmer the chicken

Add the chicken breasts, broth, and bouillon powder, then bring the mixture to a gentle boil.

Lower the heat, cover, and simmer for about 20 minutes, until the chicken reaches 165°F.

  4. Shred the chicken and cook the cauliflower

Move the chicken to a board and shred it with two forks.

Add the cauliflower to the pot and simmer until tender, about 8 minutes.

Lightly mash about one-third of the cauliflower for a thicker, creamier chili.

  5. Finish with the dairy

Return the shredded chicken and cooked bacon to the pot and reduce the heat to low.

Stir in the cream cheese until mostly smooth, then add the heavy cream.

Add the cheddar and Monterey Jack a handful at a time, stirring until melted.

Stir in the lime juice and keep the chili off high heat to prevent splitting.

  6. Rest and serve

Let the chili rest for 10 minutes so the broth thickens naturally.

Taste and adjust the salt, then serve hot with extra cheese if you like.

Substitutions

Chicken breasts for boneless skinless chicken thighs
Thighs stay juicier during simmering and add richer flavor. The chili tastes a bit deeper and slightly silkier.
Cream cheese for mascarpone
Mascarpone melts very smoothly and gives the broth a softer, buttery finish. The chili will taste a little less tangy.
Monterey Jack for smoked Gouda
Smoked Gouda keeps the chili keto-friendly and adds a subtle campfire note. The sauce turns slightly richer and more savory.

Tips

Use only a little bacon fat
Too much rendered fat can make the broth greasy. One tablespoon gives flavor while keeping the texture balanced.
Shred your own cheese
Freshly shredded cheese melts faster and more smoothly than bagged cheese. Anti-caking starches in packaged shreds can leave a grainy finish.
Mash cauliflower strategically
Mash only part of the cauliflower after it softens. You get body in the broth while keeping bites of texture.
Keep dairy on low heat
High heat can tighten the proteins in the cheese and cream. Low heat gives you a smoother, more stable chili.
Rest before serving
A short rest lets the cream cheese fully blend into the broth. It also gives the chili its best spoon-coating texture.

FAQ

Why did my chili look grainy or split?
The pot was likely too hot when the cheese went in. Lower the heat and add cheese slowly, stirring constantly.
Can I use cooked or rotisserie chicken?
Yes, add shredded cooked chicken after the cauliflower softens. Simmer it briefly, just until heated through, so it stays tender.
How can I make the chili thicker?
Mash more cauliflower into the broth and let the pot rest before serving. You can also simmer it uncovered for a few minutes.
Can I make this ahead?
Yes, and the texture often improves after chilling overnight. Reheat gently on low heat and stir often to keep the dairy smooth.
What should I do if the broth seems too thick?
Stir in extra chicken broth, a few tablespoons at a time. The flavor stays rich, and the texture becomes easier to spoon.

Serving Suggestions

This creamy chili pairs well with avocado, cilantro, and extra cheddar for fresh contrast.

A few sliced jalapenos add heat, while pork rinds bring crunchy texture on the side.

For a richer bowl, top each serving with sour cream and crisp bacon pieces.
